Ingredients
Approx. 20 pastries
- 1000g Purple Potato
- 500g Cod Loin
- 80g Spring Onion
- 200g Shrimp Core
- 6 Eggs L
- 75g Panko
- 300g Smoked Cod
- 15g parsley
- 15g Chives
Preparation
Boil the potatoes and crush them until you get a puree. Then cook the cod.
Shred, add chopped smoked cod and shrimp paste. Mix well with the mashed potatoes, cod, chopped herbs and sliced chives.
Transform into 90g balls and take to the slaughterhouse to firm up.
Meanwhile, beat 2 eggs until slightly raised and mix with the mixture. Dip the dumplings in eggs and coat with panko.
